As humans, we host more than 3 billion bacteria in our stomach alone. How might we create conditions within ourselves to better partner with the microbes that have the power to hurt or heal us?
Set within an archetypical American Diner, this meal uses the classic gameplay of Bingo and 1950’s aesthetics to playfully critique the way post-WWII American culture transformed farm-to-table into factory-to-table food. Each Bingo number serves up a new edible bacteria: introducing guests to a microbial tasting menu that playfully celebrates the “cultures” America banned from industrial food production in the 1950s and (re)inoculating diners one bite at a time with the stuff that makes culture sing.
